Cutie Cake Patisserie is a shop that specializes in GLUTEN-FREE!
Kelley is a busy girl so she bakes on the weekend, shipping out the orders every Monday to ensure the freshest baked goods possible.
This week, I had a chance to ask Kelley some questions, and here is what she had to say.

This week, I had a chance to ask Kelley some questions, and here is what she had to say.
Tell us a little bit about yourself?
"My name is Kelley and I love baking cookies for you! Several years ago I self-diagnosed Celiac disease and when on a strict gluten-free diet. Since then I have realized how hard it is to find gluten-free food; and it's even harder to find gluten-free food that tastes good and doesn't cost an arm and a leg! At that point I set out to create tasty, quality gluten-free baked goods. A few years after embarking on this journey, I decided it was time to get some classical training, so I went to Culinary Institute LeNotre, where I recently graduated as a Sous Chef de Patisserie."

"A little over a year ago, I just had this random idea to search for cookies on Etsy. I was pleasantly surprised to find that people *do* sell baked goods on Etsy, but was sad to see so very few gluten-free sellers out there. I decided to try my luck, and opened shop in March 2009. Since then I've had to make temporary closures to my shop (time is scarce these days, isn't it?), but I've also been pleased to see a real increase in gluten-free sellers on Etsy. Cheers!"
"My shop is basically a cookie jar, with a few crackers and other surprises thrown in. Ever since I was a little girl, I've been a cookie connoisseur, so naturally I've evolved into a cookie specialty baker. My favorite cookies were always those awesome sugar/shortbread ones with the royal icing decorations on them, so losing those to a gluten-free diet was very saddening. That, however, makes me twice as proud of the gluten-free shortbread recipe I've come up with. Since I *love* cookies, I know what tastes good, and I only offer products that I am 100% happy with and know that you will enjoy. EVERYTHING I make is completely gluten-free, and I am also willing to work with other food allergies if necessary."
"Well, I think I've pretty much covered that topic in the previous questions. What mainly drives me is the desire to provide people with gluten-free goods that TASTE GOOD (and also look pretty!). I love experimenting with new flavors, combinations, and designs that seem to float down from my muse randomly."
"The best -- absolutely BEST -- part about all of this? It's getting to share my results with YOU! What fun is making a delicious cookie, or a pretty cake, if you have nobody to share it with? Conquering gluten-free cookies is my goal and brings me a lot of satisfaction -- but seeing the smile on someone's face as they enjoy a yummy cookie that won't make them sick? That fills my heart with joy every single time."
-Where do you see yourself in 5 years?
"In 5 years I'd definitely like to have my own bakery/shop going. I'm working on the possibility of opening a bakery and working at a local farm in the Denver area, so we'll see how that goes. No matter what, I will be baking cookies."
What I Can Tell You: Kelley cares about what goes into her cookies. She bakes cookies that people with certain dietary restrictions otherwise wouldn't be able to enjoy. I would love to meet Kelley in person. She seems very interesting and fun. First, heck coffee at her place would involve some awesome baked goods but also, I had a chance to check out one of her Websites and I bet a conversation would include a lot of laughter. Check this out for instance; she took a World of Warcrafts chocolate cake and decided to bring it to life. Her write-up, especially of the first try cake being used as a makiwara, complete with picture made me smile. She appears to be a well rounded person interested in so many things (geology, history, mythology, nutrition, food science, design, fine arts, photography, baking, and cooking.) I am proud to introduce her to my readers.

She started because there was a lack of gluten free items on etsy and there are currently 12 items in her shop.
