Confetti Wrap (Recipe)

Ever since my medical drama which started last May, adding vegetables to my meals has been a conscious effort. While I love veggies, I prefer them raw and crunchy. Finding a meal that has plenty of flavor, color and taste was easy once I made the effort to grab some produce. While we all know eating fresh fruit and vegetables are important to our health they don't always fit into our budget. Fruits and veggies can be expensive, especially if they eventually go bad in the fridge.

I have the perfect recipe for those days when you have veggies that need to be used before they expire. Another reason to try this recipe, beside the fact that it is heart friendly is that it even tastes better the second day.

Ingredients
  • Olive Oil
  • Ground chicken or turkey
  • Onion
  • and any veggies you have in your crisper (I used green peppers, carrots, and mushrooms)
  • Your favorite seasonings (I used salt, pepper, basil, oregano and Sazon)
  • Wraps
Put a tablespoon of olive oil in the pan and let it heat up.
Add the carrots first as they take the longest to cook.
While they are going, cut up onion, add it!
Cut up pepper, add it!
Cut up mushrooms and add!
Next put in your chicken or turkey.
Stir and cook until meat isn't pink and your carrots are tender.
Heat wraps on a paper towel in the microwave for 15 seconds.

Side Note: This could be done with uncased sausage too if you aren't going for heart friendly. To use sausage; cut the casing lengthwise and crumble into the pan before adding the veggies.

Side Note #2: I like to layer flavors so as I add ingredients in, I season.

Put on wrap and serve with a large salad.
