Easy and Delicious Mozzarella Cheese Sticks

 


For New Year's Day my husband made the most delicious Mozzarella Cheese Sticks and I am not even a fan!





KETO MOzzarella CHEESE STICKS


1 - Cut the cheese into sticks. I simply unwrapped the block of mozzarella and cut into mozzarella stick sizes.

2 - Roll each stick into a mixture of almond flour and coconut flour

3 - Dip into egg 

4 - Roll into the crushed pork rinds. This is going to give you that nice crunch.

5 - Place all sticks on Parchment paper and place in the freezer. This will stop your sticks from melting too fast when you cook them.

6 - Preheat Air Fryer to 400

7 - Place in Air Fryer and cook about 6-8 minutes 

You can dip them in marinara sauce, but I love mine plain.  I wish there was more.

Our Hot Toddy Addiction

Goddess and I have a love of lemon, ginger and honey! We really love our lemon and Goddess will  eat a whole lemon at a time if she has the chance. With the flu being a pretty big concern this year in my world (I know about 30 who have had it this year); I have started making an age old elixir to try to combat all sickness from my world. Hot Toddy has been used as a natural remedy for aches and pains as well as soothing symptoms of common colds.

Whether it works or you think it does the point is a Hot Toddy doesn't just taste good, it is good for you.

The warm/hot water will help ease your congestion while the lemon and honey can help lesson your congestion as well as prevent dehydration. It is also good for a sore throat and we add cinnamon to ours because we love the smell.

We don't just drink it because we think it will help our colds, we even drink it when we are healthy as a horse.

How We Make Ours

While we boil the water (the old fashion way of course) We cut a lemon and squeeze it until there is nothing left into our mugs. Then we run a spoon through it taking all those yummy pieces of the lemon as well.

We then add the honey as well as cinnamon and stir.

We add the hot water and sip as we like it really hot!

Then we add slices of the lemon into our cups! We do love our lemon.

It only takes about 5 minutes from start to finish and it taste amazing!

Pasta with Fresh Tomatoes and Basil

I certainly didn't plan it but for some reason the other night I found myself eating from the palate of red and it was delicious!

The meal was super easy.

I threw some angel hair pasta in a pot of boiling, salted water and while that was cooking, I cut up some cherry tomatoes which I tossed with some olive oil, salt and pepper and set it aside. 

After the pasta was done, I drained it, plated it and tossed the tomatoes over it.

It was heaven!!!

Stretching My Food Dollars With A Disc Of Noodles

My family is part of a backpack program through our school district. It is for families who need extra help with snacks and lunch. Every Thursday the kids come home with a backpack filled with various items, apples, juice, oatmeal, snack crackers, fruit snacks, soup, and microwavable pasta.

The kids take turns carrying the extra heavy bag home and love putting the items away once they get home but neither of them will eat the soup. I have been stocking it in my pantry trying to think of a way to use it. They are very good to us and I refuse to not use the items they send home for my family.

Last week I opened two of them, I know they have a lot of salt, 1190 mg to be exact. So I soak them for about 8 hours draining them every so often.



I strained them two times allowing the water to just rinse off any seasonings and salt.


Next I added a tablespoon of olive oil to a pan.


And added mushrooms, broccoli and spinach and pepper.


After that, I tossed the noodles in giving

 Giving it a little stir before dumping it in the plate. It was delicious!!


These noodles are not one of the best options for dinner but many college students and folks just starting out use them all the time because they are really inexpensive. So far I have used them with tomato sauce and a homemade peanut sauce, if you have a healthier option, I would love to hear it.

I Will Never Waste Bread Again! Make Your Own Bread Crumbs

Over the past three months I have been putting the last two pieces of bread into the freezer. You know those two end pieces that no one eats and sometimes the last three slices before you open a new loaf.  This weekend I noticed that my top freezer shelf had 6 bags of bread containing just a few slices each. It was time to experiment.


Goddess and I hauled out the food processor and set it up on the counter. I grabbed a few of my favorite spices and prayed for the best.


After toasting all the slices on both sides we put them in the food processor until they were bread crumb consistency. It took about 35 seconds.


Next we added the spices and a few more slices since we didn't want to over pack the processor.



It came out amazing. We have used it twice already and are storing it in the refrigerator since there are no special preservatives to make it pantry worthy.

It looks and smells wonderful! Any other suggestions to add to our recipe? We would love to hear.

My Turkey Dumpling Recipe

I mentioned this recipe here.

In June I went to my friend Minna's house and she gave me a pack of wonton wraps that she wouldn't be able to use before she left for vacation. Not knowing what to do with them I decided to try something different. She had used them to make dumplings but never gave me the recipe so I went with what I had in the fridge. They came out so well that I have made them 4 times already including 2 times with my niece because she liked them too!

Our last time making them we couldn't find wonton wraps so we got egg roll wraps which worked out pretty well.

Our Ingredients
We put the turkey in the food processor
We put the cabbage and two tablespoons of ginger in the processor and let it rip until it was blended

Because we were using egg roll wraps we cut them with a pizza cutter into 4 squares.

We put our blended ingredients in a bowl and added chives
Then you spoon your ingredients into the center of the wrap


Dip your finger tip in water and add to the edges of the wrap, gather and squeeze into the cute little yummy packages
We cooked them for 35 minutes in pot with boiling water to make sure the turkey is cooked and eat with a little soy sauce. They are delicious, quick and easy.

Zucchini Three Ways


This week I found 8 zucchini's at A&P for $1.94. You know the ones that they lump together because they are going bad.

I love zucchini and usually I just make zucchini bread or zucchini pancakes. This times I decided to change it up a bit.

This dish was just cut zucchini, with cooking spray in the pan, salt, pepper and grated cheese. Yummy!

This was one that one of early boyfriend's mother's used to make. You cut the zucchini long wise, put sauce and cheese over and put it in the oven for about 35 minutes until the zucchini is tender.
Then I diced up chicken and zucchini, put some EVOO in the pan, the chicken until is was still a little pink in the middle, add the zucchini, some seasoning, whatever you like. I put salt, pepper, pepper flakes, oregano, parsley, and Mrs. Dash® Fiesta Lime Seasoning Blend. It was awesome!
